What is it? Bring a friend(s) for FREE this March! Have your friend use the code FIRST-FREE to sign up for class. Introducing March Meetups
Healthy lifestyles go beyond just killer workouts (thanks for having us covered there, Jacob!). Nutrition is key to health, and with so many resources and information floating around, it can be hard to understand what is right for you. Jacob is joining forces with health coach Amanda Lauren to bring you to this March Meetups! Read on to learn more.
What is it? Want a professional health coach at your fingertips? Want to learn more about general wellness and ask questions specific to you? Every week, starting mid March, Jacob and Amanda will host Zoom sessions answering live or submitted questions, as well as discussing a new topic each week. You can look forward to cooking demo’s, pantry swap outs, and much more!
How do you participate? Stay tuned for the sign up, we’ll be adding the sessions to the ‘Book Now’ page. Sessions are $25 and for each meet up you join, you will be put in a drawing for a FREE MONTH of Siwicki Fitness! Ingredients
4 thin chicken breasts
salt and pepper to taste
1/4 cup arrowroot starch (or sub baking powder if you don't have)
2 tbsp. grass fed butter or olive s oil
2 shallots, diced
8 oz. mushrooms
1 bag baby spinach
1 tsp. garlic powder
pinch of red pepper flakes
1 cup chicken bone broth (sub chicken broth)
1 tbsp. balsamic vinegar
1/2 cup canned unsweetened coconut milk
juice of 1 lemon
Fresh parsley, chopped, for serving
Directions
1. Season both sides of chicken breasts with salt and pepper and coat in arrowroot or baking powder
2. Heat butter or oil in skillet and sear chicken on both sides (about 3-4 minutes per side) - remove from pan
3. Reduce heat to medium and add more butter or oil to pan - saute shallots until soft, then add in mushrooms, garlic powder, more salt and pepper and red pepper flakes - saute until mushrooms soften
4. Add chicken broth, coconut milk, vinegar and lemon juice and cook until sauce is simmering
5. Place chicken back into pan and let cook for 8-10 minutes longer until chicken is cooked through
6. At the end, add in spinach and stir until wilted
7. Top with parsley and serve
